Ed's classic "Pendinnis Old-Fashioned"
This is an interpretation of the original old-fashion recipe as created by
the Pendinnis Club in the late 1880's for James E. Pepper, bourbon
distiller. This drink is frequently made using soda water, which is an
egregious sin and an insult to fine bourbon.
Note: James E. Pepper bourbon is being produced today, but it's resemblance
to the original is suspect and it's not available in the U.S. anyway. Fuck
it.
Use:
2 oz. Knob Creek Kentucky bourbon whiskey instead
along with:
1 oz sugar-infused Kentucky branch water*
6 drops bitters
1/2 orange slice
1 Maraschino cherry
Optional garnish:
1/2 orange slice
1 Maraschino cherry
*Prepare sugar water in the following proportions: 1 teaspoon per 4 oz.
branch H2O, boiling until the sugar is integrated. Allow to cool.
Place 1/2 orange slice, one Maraschino cherry (stem removed), bitters and 1
oz of sugar H2O in the bottom of (you guessed it!) an old-fashioned glass
and pulverize with a "muddling stick" until the fruit is little more than a
pulp haze in the bottom. . Pour in the bourbon carefully to not disturb the
fruit. Add several small ice cubes and add a splash of the remaining sugar
H2O to the top.
Garnish and serve.
